For this assignment, you will be looking at the science behind a recipe not just the culinary perspective. Select a recipe of your choice. It should be ‘moderately complicated’ that is to say it should have five or more ingredients and a number of preparation steps.

  • Describe the ingredients that are key to the recipe or that may be unusual and explain what their purpose is in the dish. The intended purpose of the preparation steps of the cooking should also be described. The choice of heat source/method should  also be explained in terms of any reactions it might bring about.
  • As a last step, propose some variations (choice of protein, method of heating, etc.) that might work.
